Second completed menu!

Two menus done!  Definately on a roll!  Most of the dinner recipes were from Jamie Oliver’s book (see previous post).  While I may not use those recipes again, I would do some variation of them.  So here’s the menu (in case you are finding this so riveting 😉 ):

Breakfasts:

  • Waffles with strawberry sauce
  • Layered applesauce, juice (zucchini, apple)
  • Cornbread, juice (zucchini, apple)
  • Scrambled eggs (cooked in cauliflower puree)
  • Grilled homemade bread, apple
  • Apple Bread Pudding
  • Cream of Wheat, juice (zucchini, apple)
  • Fruit crisp, cheddar slices…didn’t make this; ran out of oats

Lunches (very loosely followed):

  • Stuffed sandwiches
  • PB sandwiches
  • Cheese sandwiches
  • Pasta
  • Leftovers
  • And choice of veggies:  carrots, celery, cucumbers, salad, broccoli

Dinners:

  • Lasagna, Salad (from jamie oliver)
  • Veggie Burgers, green beans (from jamie oliver)
  • Chicken Tikka Masala (from jamie oliver…with meat substitute), basmati rice
  • Homemade tomato soup (from jamie oliver), grilled sandwich goat cheese and fresh basil
  • Sausage and Super mash (from jamie oliver), peas with sauce (jamie oliver)
  • Quesadillas with grilled veggies (jamie oliver)
  • Pot Pie
  • Creamy Red Pepper Soup (Vegan Coach:          http://www.vegancoach.com/ )

    I do love to cook, but always slow down in the summer. Homemade tomato soup – probably doesn’t come out of a can, eh?

    I have never been able to master soups!

      Nope (no can), but it wasn’t worth the time (or the cost). I discovered one thing about soups is that I don’t like pureed soups. Since that discovery, I find I like my soups much better.
