Jack Pepin said if you want to keep your eggs from cracking while boiling (or prevent further cracking of a fractured egg) just take a pin or needle and poke a hole in the top before you set it to boil! Apparently that takes the stress off the shell so it doesn’t crack! Oh and he said the reason it’s easier to peel an egg under running water is because the water gets between the membrane and the egg. Muy interesante! (I know…I’m a dork…how many more times do you want me to admit it?)
